Whole Wheat Oatmeal Chocolate Chip Cookie Bars
Summertime parties and cookouts are right around the corner and everyone needs a good cookie bar recipe to share with friends and family. A simple one bowl, one pan recipe packed with three kinds of chocolate chips is always a crowd pleaser. When you are hosting or attending a gathering, cookie bars are an easy, on-the-go dessert that both kids and adults love. The only problem is that these cookie bars are so good that they may not even last the car ride to the party.
Your little kitchen helper will love pouring ingredients into the bowl and taste testing the chocolate chips. I opted to use whole wheat flour, but all-purpose flour can also be used. Additionally, I found a bag of tri-chocolate chips in the store, so no need to buy individual bags.

Ingredients
- 1/2 (1 Stick) Unsalted Butter (room temperature)
- 1/2 Cup - Packed Light Brown Sugar
- 1/4 Cup - Granulated Sugar
- 1 Egg
- 1 Teaspoon - Vanilla Extract
- 1/4 Teaspoon - Salt
- 1/2 Teaspoon - Baking Soda
- 1/2 Teaspoon - Baking Powder
- 1/2 + 1/4 Cup - Whole Wheat Flour
- 1 Cup - Rolled Oats
- 1 Cup - Chocolate Chips (I used a bag mixed with Milk/Dark/White Chocolate Chips)
Method
- Preheat oven to 350°F and grease an 8x8 or 9x9 loaf pan with baking spray and line with parchment paper. Set aside
- In a large bowl, cream the butter, sugar and brown sugar with a hand mixer
- Add the egg and vanilla extract and mix
- With a spoon mix in oats, baking soda, baking powder, salt and flour. Once combined, mix in chocolate chip
- Pour batter into the 9" square pan and press the batter evenly, corner to corner
- Bake a 350° for 25 minutes. Once a toothpick test is clear your brownies are complete. If you prefer to not have brownies with a crust edge, bake for 20 minutes
