Soft and Chewy Oatmeal Raisin Cookies
One of the most requested treats my toddler asks for when he and I are out running errands is an “oatmeal cookie”. So you can imagine his excitement over us baking them together at home. He and I both prefer a soft and chewy oatmeal cookie with a slight crunch for texture and this recipe delivers. It’s quick to assemble and bake, perfect for a morning or afternoon project with your little one. To make it extra special add your favorite local ice cream to create a mini ice cream sandwich. Recipe Adapted from: Quaker Oats
Ingredients
- 1/2 Cup + 6 Tablespoons - Butter, softened
- 3/4 Cup - Firmly Packed Light Brown Sugar
- 1/2 Cup - Granulated Sugar
- 2 Eggs
- 1 Teaspoon - Vanilla
- 1 1/2 Cups - All-Purpose Flour
- 1 Teaspoon - Baking Soda
- 1 Teaspoon - Ground Cinnamon
- 1/2 Teaspoon - Salt
- 3 Cups - Oats (quick or old fashioned, uncooked)
- 1 Cup - Raisins
Method
- Heat oven to 350 Degrees
- Using a stand mixer, cream the butter, brown and white sugar together
- Add egg and vanilla
- In a separate bowl, combine flour, baking soda, cinnamon and salt
- Add flour to the butter and egg mixture, mix well
- Add oatmeal and raisin, mix well
- Scoop cookie dough onto a uncreased cookie sheet
- Bake 8-10 minutes until light golden brown
- Cool for 1 minute and then transfer to a cooling rack
