No-Bake Mint Pie with Oreo Crust and Crumble Topping
When I make any of my mom’s classic holiday desserts I’m transported back to sitting at the holiday table in my childhood home. This mint pie is one of those desserts. My sister and I share a love of anything mint flavored and is probably why we still enjoy this pie today. The green color of the mint marshmallow filling is perfect for the festive holiday table. I made a homemade Oreo crust (steps provided below) but you can easily purchase a pre-made Oreo crust to speed up your pie making process. As seen below my kitchen helper enjoyed crushing the Oreos in the food processor, so even though the homemade crust added time, it was worth giving him the experience. I hope you enjoy this easy, no-bake holiday pie as much as I do.

Ingredients
- 24 - Large Marshmallows
- 3/4 Cup - Milk
- 2 ounces - Creme de Menthe
- 1 Cup - Whipping Cream
- OREO CRUST
- OREO CRUST
- 25 Oreo Cookies
- 5 Tablespoons - Unsalted Butter (melted)
Method
- OREO CRUST
- Add the Oreo cookies into a food process and finely crush them. Do not remove the filling.
- Transfer the crushed cookies into a medium bowl and add the melted butter. Mix with a fork.
- Press the crumb into the bottom and up the sides of a 9" pie plate. Chill until ready to fill
- FILLING
- In a sauce pot, on low heat, melt the marshmallows with the milk. Once combined remove from heat and allow to cool. Once cooled, add Creme de Menthe and mix well. Set aside
- Pour the 1 cup of whipping cream into a stand mixer or use a hand mixer. Beat until whipped cream is formed. (hint: using a chilled bowl and beaters will speed up the process)
- Fold into the cooled marshmallow mixture
- Pour the filling into the Oreo pie crust and chill for at least 90 minutes.
