Road Trip: Lyman Orchards and Strawberry Popsicles

One of my favorite times of the year is when Lyman Orchards Pick Your Own season opens.  I still remember going blueberry picking with my family and loading up the basement freezer with numerous bags to use for blueberry pie at Christmas.  When I had my son I was determined to find an orchard so he could have a similar experience and create our own tradition.  This was our second year going to the Lyman Orchards to pick strawberries and I he loved it even more than last year.  Prior to the orchard being open I already knew what I wanted to make using the freshly picked strawberries, popsicles.  Making homemade popsicles was new to me, but it turns out it was probably one of the easiest things I have made.  The only additional step I took from the original recipe was using the immersion blender to remove the remaining larger chunks.  A stand blender would yield the same result.

Strawberry, Rhubarb and Lime Popsicles

Prep Time: 15 mins
Cook Time: 20 mins
Yields: 6


  • 1 1/2 Cups - Diced Strawberries
  • 2 1/2 Cups - Diced Rhubarb
  • 1/3 Cups - Granulated Sugar
  • 2 tablespoons - Honey
  • 1 tablespoons - Water
  • 1-2 teaspoons - Lime Zest
  • 1-2 teaspoons - Lime Zest


  1. In a medium sauce pan over medium heat place the strawberries, rhubarb, sugar, honey, water and lime zest
  2. Stir until the sugar is dissolved
  3. Cook for 20 minutes and stir occasionally
  4. After the 20 minute cook time a few chunks will be remaining. If a smooth consistency is desired use an immersion or standup blender
  5. Once cooled add the mixture to the popsicle molds and freeze
  6. Once the popsicles are frozen, 8 hours to overnight, run the popsicle under warm water for a few seconds to loosen it from the mold
