Happy 4th! Vanilla Sprinkle Cake, Vanilla Buttercream and Crumb Topping

Happy Fourth of July! When it’s time to celebrate a birthday, special event or holiday, cupcakes are always my first choice.  There is something so convenient and special about having your very own cupcake to enjoy. This could be my new favorite cupcake creation to date. As mentioned in previous posts I love classic flavors so naturally a vanilla based cake, plus vanilla buttercream was the answer. To celebrate “the fourth” I wanted to create a new version of the classic with rainbow sprinkles and a crumb topping. The sprinkles added a fun, firework like look to the cupcake but did not distract from the flavor. The crumb also used rainbow sprinkles and added texture and a bit of color to the exterior of the cupcake.

The crumb topping transformed this great cupcake into an amazing cupcake. It is easy to make and is worth the extra time. If you have never made a crumb topping for a cupcake before, this is the one to try. Just watch out, it’s addictively good and you will find yourself adding the crumb to ice cream or any other sweet treat in the house.

Your kitchen helper will love being involved in this recipe. A new ingredient for them to discover is the clear vanilla extract. Since the Milk Bar speaks so highly of this product I decided to use it too and keep the crumb authentic. I also used the product in the cake and frosting as it provided a great classic vanilla flavor. Mixing, pouring and scooping the batter into the cupcake pan are many of the skills your helper will enjoy while making this recipe. So enjoy the holiday and make these cupcakes to celebrate any occasions all year round.

Vanilla Sprinkle Cake, Vanilla Buttercream and Crumb Topping

Prep Time: 15 mins
Cook Time: 15-17 mins
Yields: 12


  • 1/2 Cup - Sugar
  • 1 1/2 Tablespoon - Light Brown Sugar
  • 3/4 Cup - Cake Flour
  • 1/2 Teaspoon - Salt
  • 1/2 Teaspoon - Baking Powder
  • 2 Tablespoon - Rainbow Sprinkles
  • 1 Tablespoon - Clear Vanilla Extract
  • 1/4 Cup - Canola Oil (or grapeseed oil)
  • 1 1/4 Cup - Cake Flour
  • 1 Cup - Sugar
  • 1 1/2 Teaspoons - Baking Powder
  • 1/2 Teaspoon - Salt
  • 1 Egg
  • 1/2 Tablespoon - Clear Vanilla Extract
  • 1/2 Cup - Vegetable Oil
  • 1/2 Cup - Milk
  • 1/2 Cup - Rainbow Sprinkles
  • 1 Stick of Butter (softened)
  • 2.5 Cups (250g) - Confectioners Sugar
  • 1 Teaspoon - Clear Vanilla Extract
  • 2 Tablespoons - Milk


  2. Preheat oven to 300° and use a quarter sheet pan as is (no parchment or greased)
  3. In a large bowl combine the sugar, light brown sugar, cake flour, salt and rainbow sprinkles with a hand mixer
  4. Add the clear vanilla extract and canola oil. Mix with hand mixer until chunks or crumble forms
  5. Spread evenly on the baking sheet. Bake at 300° for 15 minutes. Allow it to cool completely before topping cupcakes
  7. Preheat oven to 350° and line cupcake pan with paper liners. Set aside
  8. In a large bowl mix the cake flour, sugar, baking powder and salt. Set aside
  9. In a medium bowl, combine the egg, clear vanilla extract, vegetable oil and milk
  10. Pour the wet ingredient into the dry ingredients. Once combined add the rainbow sprinkles
  11. With an ice cream scoop or spoon, evenly distribute the cupcake batter into the cupcake pan
  12. Bake at 350° for 15-17 minutes until toothpick inserted comes out clean. Allow to cool before frosting
  14. In a medium bowl, add the butter, confectioners sugar and mix on medium-high speed of a hand mixer
  15. One creamy and fluffy, add the vanilla extract and 2 tablespoons of milk. If the frosting to too thick for your needs, add another tablespoon to thin out.
  16. Once the frosting is prepared you are ready to put together the cupcakes. Frost each cupcake and sprinkle with the crumb topping. Press the topping into the frosting so you don't lose a crumb. Enjoy
