Feeling Like Spring: Lemon Blueberry Baked Donuts
Spring weather is in the air this week and I couldn’t be happier. With that said, living in New England, it’s still February and we could always get snow again before it’s officially Spring. So enjoy the warmer weather while it’s here and add an extra dose of sunshine with these Lemon Blueberry Baked Donuts!
My kitchen helper and I recently traveled to the beach to visit with family and made a dozen of these perfectly baked donuts as a rainy day activity. I love the simplicity and quick bake time of a baked donut recipe. All you need is one large bowl to mix up all the ingredients and in 8-10 minutes you have fluffy donuts ready to be dipped in icing. The combination of the fresh blueberries and lemon makes it’s prefect to celebrate Spring.

Ingredients
- 1/4 Cup - Unsalted Butter (melted)
- 1/4 Cup - Canola Oil
- 3/4 Cup - Sugar
- 2 Eggs
- 2 Teaspoons - Vanilla Extract
- 1-2 Teaspoons - Granted Lemon Zest
- 1 Cup - Whole Milk
- 2 2/3 - All-purpose Flour
- 1 1/2 Teaspoon - Baking Powder
- 1/4 Teaspoon - Baking Soda
- 1/2 Teaspoon - Salt
- 1 Cup - Fresh Blueberries
- GLAZE:
- 1 1/2 Cups - Powdered or Confectioners Sugar
- 4 Tablespoons - Milk
- 1 Teaspoon - Vanilla
- 1/4 to 1/2 of freshly squeezed lemon (optional, add as desired)
Method
- Preheat oven to 425° and grease your baked donut pan with cooking spray
- In a large bowl, whisk the melted butter, oil and sugar together
- Add the eggs, vanilla, lemon zest and milk, mix until incorporated
- In the bowl that the Flour is already in add the baking powder, baking soda and salt. Mix. Add the dry ingredients into the wet ingredients and mix until incorporated
- Pour the blueberries into the batter and mix with a spoon. Transfer the batter into a gallon size ziploc bag. Cut the corner of the bag large enough so the blueberries can fit through
- Fill each donut pan well with batter. Reserve the remaining batter for the second batch. Bake the donuts at 425° for 8 minutes or until a toothpick comes out clean
- While they bake, make the glaze. Mix the sugar, milk and vanilla until desired consistency. Add the lemon juice, but taste as you add, add more for an enhanced lemon taste
- When donuts are done, transfer to a wire rack to cool slightly. Once they are cool enough for you to handle them, dipped them in the glaze and place on parchment to catch the drips. Optional: add more grated lemon zest on top for decoration and more lemon flavor
