White Chocolate and Mascarpone Mix Berry Tart

Making a tart is something new for me.  I have always loved how pretty a tart looked and research many recipes to find one that didn’t take a lot of time and was still delicious.  If you have ever wanted to attempt making a tart, this is the recipe for you.  The crust is the first step and as you can see in the images below my kitchen helper loved cracking all the graham crackers into the food processor and forming the crust. Many tart recipes call for a pastry crust, but that added additional chill time in the refrigerator, this graham cracker crust has three ingredients and is quick to make and bake. I used a square tart pan with a removal bottom, but a circle or rectangle will work as well. Once it’s baked for 12 minutes you allow it to cool, add the filling and decorate.  It couldn’t get easier.  You can get creative with the berries, I decided to use what was in season, but you can certainly cover the entire tart with a single berry of choice.  The berries bring the whole tart flavor together so make sure each serving has a few to enjoy.

White Chocolate and Mascarpone Mix Berry Tart

Cook Time: 12 mins
Yields: 9

Ingredients

  • CRUST:
  • 10 - Graham Crackers
  • 2 Tablespoons - Sugar
  • 6 Tablespoons - Melted Unsalted Butter
  • FILLING:
  • 1 Cup - Whipping Cream (or Heavy Cream)
  • 8 oz - Mascarpone Cheese
  • 1 Teaspoon - Vanilla Extract
  • 3 Tablespoons - Sugar
  • 1/3 Cup - White Chocolate (melted)

Method

  1. Preheat oven to 350°F degree. Have a 9" removable bottom tart pan
  2. In a food processor add the graham crackers and sugar. Grind them until combined
  3. Add the melted butter to form the crust. Pour in your tart pan and spread the crust out evenly and press
  4. Bake for 12 minutes or until it's browned. Cool completely before adding filling (refrigerator if needed)
  5. FILLING:
  6. In a medium bowl and using a hand mixer, combined the whipping cream, mascarpone cheese, vanilla and sugar until fluffy
  7. Then add the cooled melted white chocolate and mix until combined
  8. Pour the filling and spread on top of the cooled crust. Decorate with berries, shave with white chocolate if you like and refrigerate before serving
