Small Batch: Vanilla Cupcakes With Vanilla Frosting
Although the holidays are over, there are still January birthdays and special events to celebrate. I always love to celebrate with a cupcake, but many times I don’t necessarily need a dozen, so a small batch recipe is a perfect solution. You can whip up this recipe with two bowls and your whisk. The vanilla frosting is another classic for your recipe archives. It’s simple and full of wonderful vanilla flavor. So enjoy this sweet treat for any occasion and know that your little kitchen helper will be screaming for “Cupcakes!” just like mine did.

Ingredients
- CUPCAKE
- 1 Large Egg
- 1/4 Cup - Granulated Sugar
- 2 Teaspoons - Pure Vanilla Extract
- 4 Tablespoons - Unsalted Butter (melted and slightly cooled)
- 1/2 Cup - All-Purpose Flour
- 1/2 Teaspoon - Baking Powder
- 1/8 Teaspoon - Salt
- 1/4 Cup - Milk
- VANILLA FROSTING
- 3/4 Cup - Powdered Sugar
- 3 Tablespoons - Unsalted Butter (room temperature)
- 1/4 Teaspoon - Pure Vanilla Extract
- 1-2 Teaspoons - Milk
Method
- Preheat oven to 350 degrees. Line 5 muffin cups with paper liner
- In a large bowl, whisk together the eggs and sugar for about 1 minute
- Add vanilla extract and melted butter, whisk to combine again
- In a separate bowl, combine flour, baking powder and salt
- Add half of the dry ingredients to the wet. Stir with a spoon and combine
- Add the milk. Stir until just combined
- Add the rest of the dry ingredients and stir. Do not over mix
- Divide the batter between the 5 cupcake liners. Bake for 13-16 minutes until a toothpick comes out clean. Cool completely before frosting
- FROSTING:
- In a bowl beat the powdered sugar and butter until smooth (use a hand mixer or spoon)
- Add vanilla and 1 teaspoon of milk. Beat until light and fluffy. If too thick add an additional teaspoon of milk
- Apply frosting to cupcake with off set spatula or knife
