Almond Butter Cookies: A Lunchbox Treat for You and Your Little Ones

I have been making these almond butter cookies way before I even had my son.  Years back I was working out and weight training 4+ days a week and enjoyed these cookies as a post-workout treat.  Now that I’m baking recipes with my son I decided to bring them back and tweak them slightly.  Since he will be enjoying them too, I decided to finely chop the walnuts and dried cranberries.  I actually used a food processor to do all the work for me.  This is a perfect snack to include in your little ones lunch box and enjoy yourself.  Feel free to substitute your children’s favorite dried fruit to customize the cookies to their palette.

Almond Butter Cookies

Prep Time: 5 mins
Cook Time: 16 mins
Yields: 9-12


  • 1 Cup - Almond Butter (creamy and salted)
  • 1 Cup - Raw Sugar
  • 1 Egg
  • 1 Teaspoon - Baking Soda
  • 1/2 Cup - Walnuts (finely chopped)
  • 1/2 Cup - Dried Cranberries (finely chopped)


  1. Heat oven to 325 degrees
  2. In a medium size bowl, combine the almond butter, sugar, egg and baking soda
  3. Add chopped walnuts and dried cranberries and mix until combined
  4. Use an ice cream scoop and place cookie mixture on a sheet pan with silicon pad. Press the dough down to flatten the dough ball slightly

Additional Info

The cookies will spread, so if making for little kids you can make the cookie size much smaller and yield more cookies per batch.
